Sweet Potato Brownies

So i guess this is hello! My name is Amy and i'm 16. I've been battling with mental illness for 10 years now and am currently inpatient for anorexia. I'm starting this blog so i can keep a load of my recipes in one place ☺
My first recipe is one that i've tried for the first time today and i tweaked the recipe slightly for myself from a mixture of different sites. So here it is;

Sweet Potato Brownies
This recipe makes about 9 gooey chocolatey brownies. I will warn you, they don't taste like your typical brownie - however they are still nice!



Ingredients
• 425g of boiled sweet potato (roughly two medium) — make sure they're really pureed!!
• 250g of mashed banana (about 2 medium bananas)
• 100ml of plant-milk. I used almond but feel free to use whatever you want. If you aren't vegan, intolerant or allergic then you could use dairy milk.
• 50g of cocoa powder. You could use cacoa powder for a richer brownie.
• 110g of caster sugar (or another choice of sweetener. I used 2/3s cup of sweetener).
• 110g of your choice of flour (i recommend plain though)
• 1tbsp of mixed spice - or you could just use cinnamon like me!!
• 2tsp of baking powder
• Optional - 2tbsp of cacao nibs or chocolate chips

Method
• Pre-heat the oven to 180 degrees celsius
• Mix together the potato, banana and milk together.
• Sieve in flour, cocoa powder, spice and baking powder.
• Mix in the sugar or sweetener of your choice.
• To get your brownies more light, use an electric whisker for about 2 minutes.
• Pour the mixture into a lined pan.
• Cook the brownies in the oven for 40 minutes. They will still be slightly gooey but this is fine!

Enjoy these brownies with some fresh fruit and ice cream for a tasty treat!
