Apple and Cinnamon Pancakes

These super yum pancakes were the first pancakes i've had for ages. I was always under the impression that you needed eggs for pancakes yet after an experiment i've discovered you don't! However it does mean that your pancakes are thick but who doesn't like thick pancakes 😏   Ingredients •75g of flour •2 apples, grated •1tsp baking powder •1tsp vanilla extract •2tsp ground cinnamon •100ml of you choice of milk Method -mix together all ingredients but the apple and liquid -stir in the liquid -add the apple in -heat a little oil in a pan (unless you have a non stick pan) -add 2tbsp of mixture per pancake -leave to cook at a low to medium heat -flip and cook the other side -bon appetit! 🥞

Sweet Potato Brownies

So i guess this is hello! My name is Amy and i'm 16. I've been battling with mental illness for 10 years now and am currently inpatient for anorexia. I'm starting this blog so i can keep a load of my recipes in one place ☺ My first recipe is one that i've tried for the first time today and i tweaked the recipe slightly for myself from a mixture of different sites. So here it is; Sweet Potato Brownies This recipe makes about 9 gooey chocolatey brownies. I will warn you, they don't taste like your typical brownie - however they are still nice! Ingredients • 425g of boiled sweet potato (roughly two medium) — make sure they're really pureed!! • 250g of mashed banana (about 2 medium bananas) • 100ml of plant-milk. I used almond but feel free to use whatever you want. If you aren't vegan, intolerant or allergic then you could use dairy milk. • 50g of cocoa powder. Vanilla Chia Pudding and Smoothie

My snack was a vanilla chia seed pudding with a banana and a weetabix smoothie layered on top 😌 it tasted so good. I've been struggling quite a bit recently which isn't helped by the fact that mum and I are argueing all the time :( Anyway, here's the recipe for a delicious chia pudding   Ingredients • 3 tbs of chia seeds (i got mine from  Sevenhills Wholefoods )  • 135ml of your choice of milk. I enjoyed having  Alpro vanilla soy milk .  • 1tsp of vanilla extract  • 1 frozen banana • 1 weetabix • 150ml - 200ml of liquid (i used mango juice) Method • Leave the chia seeds to soak up the liquid and vanilla extract. For a thicker pudding put in less liquid of use yoghurt instead (or even a mixture if you wish). • blend together the banana, weetabix and liquid. The more liquid you use, the thinner the smoothie.  • After the chia seeds have soaked up the liquid then layer the smoothie on top and enjoy!
